Like my other pasta recipe this is easy to adapt for vegetarians – chickpeas and half a tin of tomatoes? Don’t mind if I do! The end of the jar of pesto and half a mashed avocado? Yummy! Handful or two of pasta, depending on appetite
80g tin of tuna, drained
2 tablespoons of tinned sweetcorn
1/2 large red pepper, diced
couple of tablespoons mayonnaise
small block of cheese, grated (ideal for using up that hard bit no-one wants to eat)
Cook the pasta according to instructions.
Meanwhile prepare the rest of the ingredients
Mix together the tuna, sweetcorn, pepper and mayonnaise
Drain the pasta and toss with the tuna mix
Stir in the grated cheese and serve
