Ready Steady Cook Pasta!

Brief description of Recipe

I used to be a huge fan of Ready Steady Cook, where chefs and a member of the audience had to knock up a meal in 25 minutes. It goes to show that fast food doesn’t have to come in a black plastic tray!

This afternoon, Little Miss Green appeared sleepy eyed in search of lunch. I made this quick pasta recipe in 12 minutes (the time it took the pasta to cook) and it’s great for using up leftovers…

Like my other pasta recipe this is easy to adapt for vegetarians – chickpeas and half a tin of tomatoes? Don’t mind if I do! The end of the jar of pesto and half a mashed avocado? Yummy! In my Quick Pasta Lunch recipe, we used chicken to make it more suitable for meat eaters. You really are limited only by your imagination…


List of ingredients

Handful or two of pasta, depending on appetite
80g tin of tuna, drained
2 tablespoons of tinned sweetcorn
1/2 large red pepper, diced
couple of tablespoons mayonnaise
small block of cheese, grated (ideal for using up that hard bit no-one wants to eat)

Preparation and Method

Cook the pasta according to instructions.
Meanwhile prepare the rest of the ingredients
Mix together the tuna, sweetcorn, pepper and mayonnaise
Drain the pasta and toss with the tuna mix
Stir in the grated cheese and serve
