12 days of Christmas turkey strogonoff

Brief description of Recipe

Christmas is a distant memory again, but the turkey sitting in the fridge reminds us of full bellies.
Here’s a simple use-it-up supper based on a strogonoff recipe

List of ingredients

1 medium onion, finely diced
a little cooking oil
1 clove garlic, smashed and chopped
around 300g cooked turkey, roughly chopped
1/2 red pepper or handful of mushrooms roughly chopped
1 tsp paprika
1 tsp dijon mustard
200 ml double cream

Preparation and Method

Fry the onion until softened with the garlic
Add the pepper or mushrooms until cooked through
Add the turkey and paprika and mustard and heat thoroughly
Stir through the cream and heat GENTLY until just warmed (otherwise the cream can separate)
Serve with rices
