Courgette Curry

Brief description of Recipe

When friends give you courgettes, make curry!

List of ingredients

1 chopped onion
oil for frying
1 chopped red chilli
2 cloves garlic, smashed and chopped
thumb sized piece of ginger, grated
tsp coriander
tsp cumin
tsp turmeric
6 cardamom pods
1/4 tsp ground cinnamon
Tin chopped tomatoes
Lots of chopped courgettes!
Red and green lentils (dried or tinned)
Can coconut milk
water if necessary to cook lentils
handful spinach and fresh coriander to serve

Preparation and Method

Fry onion for about 5 mins
Add all the spices
Stir around and add tomatoes
Cook this for a couple of minutes, then then add courgettes, lentils, top up the water, add the coconut milk and cook until the lentils are cooked – around 20mins
Add spinach and cook for a few more minutes and then add fresh coriander
Serve with rice.

  1. Lovely recipe – courgettes are not my most favourite veg (unless in courgette cake of course!) so I usually grate them into any dish I make. Thank you for the recipe.
