When friends give you courgettes, make curry!
1 chopped onion
oil for frying
1 chopped red chilli
2 cloves garlic, smashed and chopped
thumb sized piece of ginger, grated
6 cardamom pods
1/4 tsp ground cinnamon
Tin chopped tomatoes
Lots of chopped courgettes!
Red and green lentils (dried or tinned)
Can coconut milk
water if necessary to cook lentils
handful spinach and fresh coriander to serve
Fry onion for about 5 mins
Add all the spices
Stir around and add tomatoes
Cook this for a couple of minutes, then then add courgettes, lentils, top up the water, add the coconut milk and cook until the lentils are cooked – around 20mins
Add spinach and cook for a few more minutes and then add fresh coriander
Serve with rice.
