Strawberry coulis recipe

This week I’m giving myself a bit pat on the back.

You remember the other day I shared seven amazing strawberry recipes?

Well I was in danger of ending up with some delightful strawberries being composted myself, here at zero waste towers.

It was Sunday lunchtime and I knew the few remaining strawberries would be compost fodder by the morning.

Now my two have to have some kind of decadent chocolately Sunday pudding otherwise it’s just not a good Sunday for them.

I had already made some little chocolate puddings and little Miss Green’s favourite – vanilla custard, but couldn’t bear the thought of these strawberries going to waste on my conscience. Not when I’m taking part in Food Waste Friday AND this year’s zero waste week is all about reducing food waste.

I only had half an hour before the meal was ready so needed to think quickly.

I figured strawberry, chocolate and vanilla could be a great combination so decided on a strawberry coulis. It couldn’t be simpler to make:

Strawberry coulis recipe


3fl oz water
1 oz caster sugar
250 gms hulled and halved strawberries
1 tbsp agave syrup (optional)


Put the sugar and water in a saucepan and bring to the boil to dissolve the sugar
Add the strawberries and simmer for 3 minutes until the strawberries have softened
Remove from the heat and add the agave syrup then leave to cool for a while
Blitz the coulis in a  blender then push through a sieve
Refrigerate until needed

This, my friends, was like the proverbial icing on the cake. I got all a la carte on myself and made this cute pudding:

But once the camera shoot was over, my two just scoffed the coulis off a big spoon straight from the jug and there wasn’t even a cats lick left 😉
