Annie's ZWW Fondue Veggie Bake

In our house, the arrival of Autumn means the start of the cheese fondue season. Not the healthiest of dishes but an occasional treat – sometimes, only a large pot of melted cheese laced with cider will do! Last night heralded the inaugural fondue of the season and as usual, there was a fair bit of this gooey delight left over.

I am ashamed to say that it usually gets scraped into the bin but this is ZWW and food wastage is off the menu, so I came up with this for tonight’s dinner …… one tip, leave the leftover fondue in the fridge overnight as it’s a lot easier to grate when cold.
