Vegetable crumble recipe – inspired by Westy Writes and Cranks!

Root vegetable crumble is great for using up the wilting veg in your fridge or for tackling your weekly vegetable box during the autumn.
Feel free to change the ingredients to suit whatever you have on hand and the season; you can make it more summery by swapping the root veg for peppers, courgettes and french beans.
Add puy lentils to make this dish more substantial or a layer or spinach or chard between the veggies and the topping to Use ’em up!

It’s simple to make this a vegan recipe, or even a meaty recipe by adding bits of leftover meat from your Sunday dinner.
